Cheesy Crab Dip....
2 Tbsp butter
1 Tbsp minced shallot
1/2 c. sliced almonds
12 ounces champagne
1 c. shredded sharp cheddar cheese
1 c. shredded gouda cheese
2 Tbsp flour
1/2 c. cream cheese
1 Tbsp hot sauce (optional)
1/2 tsp paprika
1/4 tsp salt
1/8 tsp white pepper
2 Tbsp chopped chives
1/2 cup crab meat
Melt butter in 2 qt. saucepan. Add shallots, saute 30 seconds. Add almonds, saute until golden.
Ad champagne and heat until it starts to steam.
Place 2 c. cheese and flour in zipper bag and shake to coat cheese.
Add floured cheese and cream cheese to pan and whip until smooth.
Add paprika, salt, white pepper and hot sauce, mix.
Fold in chives and crab meat.
Serve warm with pita or tortilla chips.
Makes 6-8 portions
